Berry Cheesecake Popsicles

Five minutes is all you need to make these creamy frozen summer treats.

There’s nothing quite like a slice of homemade cheesecake topped with freshly picked berries. The combination of the creamy/tangy cream cheese mixing with the sweetness of the berries, plus the crunchiness/richness of the graham cracker crust is simply perfection. These berry cheesecake popsicles taste just like classic cheesecake, but they take only a fraction of the time to make. They also contain a lot less sugar and cream cheese than most baked cheesecakes. This does’t mean that this is a super healthy dessert, but it is a healthier alternative. Although refined sugar was my constant companion in childhood, we have since parted ways (for the most part).

Since cutting processed foods from my diet and trying to stick to a mostly natural diet (eating food that’s grown, not made), my body reacts differently to certain ingredients. I used to be able to finish a slice of cake on my own no problem. Now, whenever I take a few bites of any dessert, I almost instantly get a sugar headache. My body does not like refined sugar (and neither does yours) and refuses to tolerate it. I’ve talked to many other women who started having this same experience once they decided to cut down their sugar intake and start eating healthier. It’s easy to not realize what certain foods might be doing to you, or how they may be making you feel, when your diet has never really changed. However, once your diet shifts to incorporating more natural foods, you can physically feel the negative effect sugar has on the body.  And, when you’re that in tune wth your body, it’s a lot easier to make healthier eating choices.

Soooooo…long story short:

  1. There is no added refined sugar in this recipe, which means no sugar headaches.
  2. These take 5 minutes to make.
  3. They are delicious, taste just like cheesecake, and are the perfect summertime treat.

The ingredients are simple, and the recipe is super easy to follow. You simply blend the ingredients together, pour into molds, then freeze.  If you don’t have popsicle molds, you can pour the popsicle mixture into small paper cups, then tear the paper off once they are frozen. Whatever mold you use, you’re going to end up with a delicious slice of cheesecake on a stick, in other words, a berry cheesecake popsicle. 🙂

Ingredients

  • 1/2 cup almond milk
  • 1/2 cup greek yogurt (plain)
  • 4 oz cream cheese
  • 1 tsp vanilla extract
  • 2 Tbs agave nectar
  • pinch of salt
  • fresh or frozen berries, rinsed (my favorite are blackberries + raspberries)
  • 2 graham crackers, crumbled

Instructions

  1. Blend almond milk, greek yogurt, cream cheese, vanilla extract, agave nectar, and salt together until smooth.
  2. Stir in graham crackers and berries.
  3. Pour mixture into popsicle molds, freeze until solid (around 5 hrs).

Here’s a little something just for you! Don’t worry about grabbing a piece of paper and pen to write down all these ingredients, just print the grocery list below!

I even left room for you to write down the rest of your grocery list! This is the list I use whenever I go to the store. It makes finding everything so easy and I never forget anything!
